Spicy Pork Ribs
by L.C. Miller
Ingredients:
1 ½ cups, Delavignes Garlic Infused Grapeseed Oil
1 ½ cups, Delavignes Aged Balsamic Vinegar
1 Medium Onion
2 Cloves of Garlic
1 Habanero or Scotch Bonnet Pepper (if this is too spicy for your taste, use a Jalapeño pepper for a mild heat)
1 Rack of Pork Ribs
1 ½ cups Honey
Salt & Pepper
Dry rub spice mix (3 tablespoons each of Paprika, brown sugar, Cumin, and Garlic Salt)
1. Rinse and pat dry rack of ribs. Rub both sides of meat with dry rub spice mix. Put ribs to the side while you make the wet dressing.
2. In a food processor blend onion, garlic cloves, Habanero or Jalapeño pepper, and Garlic Grapeseed oil. Using a food basting brush, brush both sides of the ribs with the pepper/oil blended mixture. Place ribs in a shallow pan (a ½ or 1 inch deep baking sheet works best) with 1 cup of water poured in bottom of pan. Cover with foil and bake in the oven for 1 hour at 400 degrees. (this will cook the ribs thoroughly, and the water will help the pork meat stay moist and tender)
3. In a microwave safe dish, mix honey and Delavignes Aged Balsamic vinegar, microwave on high for 30 seconds, or until honey has thinned enough to stir. Stir together vinegar and honey.
4. Remove ribs from oven and transfer ribs onto the grill, brushing both sides liberally with the honey/vinegar mixture.
